The one that smells like a Sunday. Short ribs braised in red wine the night before and reheated in the oven while you shower, over mashed potatoes from a tub. Shrimp cocktail in a wine glass to start, chocolate pots that set themselves in the fridge during dinner. It looks like you cooked all afternoon, and in a sense you did, on Thursday.

Why it works

The oven plan

Thursday: 325°F from 8:00 PM, the pot in from 8:35 to 11:05, then cooled on the stove and refrigerated whole. Friday: the oven is off until 7:00, when it goes to 300°F; the pot goes in at 7:05 for 60 minutes and comes out at 8:05. Nothing else uses the oven all night. The shrimp and the chocolate pots never see heat except a mug of cream in the microwave, and the mashed potatoes are five minutes in the same microwave at 7:55.

The main is finished on Thursday. Friday is an hour of taking things out of the fridge: the pot goes into a 300°F oven at 7:05 and reheats itself while you shower, the chocolate set at 6:00, and the shrimp waits on ice until 7:45. The only knife on Friday is for one lemon. The cream for the chocolate is heated in a mug in the microwave so the one small pot is free for the syrup. This is the evening for the week you cannot think.

Before you shop

One list, four cards

Shop Thursday for everything; the ribs need Thursday's oven. One lemon covers the shrimp sauce and the wedges. The cheapest Cabernet or Merlot on the shelf goes into the pot; if you want a bottle on the table, buy a second one. Heavy cream: one pint, of which you use three-quarters of a cup. Raspberries and flaky salt are the whole dessert garnish; buy them Thursday and keep them in the fridge. Shrimp: cooked, peeled, tail-on from the seafood case; frozen is fine, thawed under cold water at 5:30. The mashed potatoes come from a tub in the refrigerated case and nobody in history has asked.

The plate and the table

Shrimp first at 7:45: two wine glasses full of ice with the sauce pushed into the middle and the shrimp hooked round the rim, each on a small plate with a napkin, a plate for the tails between you. At 8:10 two wide bowls: a bed of mashed potato with a well in the middle, one or two whole pieces of beef set in with tongs, sauce and carrots ladled round until they pool, the rim wiped, pepper over. The chocolate pots come out in the glasses they set in, a pinch of salt and five raspberries to one side, two small spoons; the table has been set since 7:20, candle lit, lamp on, overhead off.
