One small pot, a pitcher (a large mason jar or a clean juice carton works), a second smaller jar for The 7:29, two glasses (stemless wine glasses or tall tumblers), a freezer.

The 7:30 Timeline

5:45T-105Rosemary syrup: small pot, ½ cup sugar, ½ cup water, 3 rosemary sprigs. Medium heat, stir until the sugar disappears, let it bubble 2 minutes. Off the heat. Leave the rosemary in.
6:00T-90Pull the rosemary out of the syrup and throw it away. The pitcher: 1 cup gin, 2 cups grapefruit juice, ⅓ cup of the syrup. Stir. Taste a spoonful. Too sour: another 2 tablespoons syrup. Too sweet: more juice. Lid on, fridge.
6:05T-85Hands off from here. The 7:29 jar: 1 cup grapefruit juice, 3 tablespoons syrup. Stir, lid, fridge. Keep the rest of the syrup in a jar — it lasts two weeks.
6:10T-80Cut the grapefruit in half, then cut 4 thin half-moon slices from one half. Cover, fridge. Pick out 2 nice rosemary sprigs for garnish.

The 7:30 Spritz — and The 7:29 · Method

  1. 1Put ½ cup sugar, ½ cup water and 3 rosemary sprigs in a small pot over medium heat. Stir until you cannot see the sugar. Let it bubble gently for 2 minutes. Turn it off and let the rosemary sit in it for 15 minutes.
  2. 2Remove the rosemary. This is rosemary syrup; it keeps in the fridge for two weeks.
  3. 3In the pitcher, combine 1 cup gin, 2 cups grapefruit juice and ⅓ cup rosemary syrup. Stir and taste. Adjust with syrup or juice, 2 tablespoons at a time. Refrigerate.
  4. 4In a second jar, combine 1 cup grapefruit juice and 3 tablespoons rosemary syrup. This is The 7:29. Refrigerate.
  5. 5Cut four thin half-moon slices from the grapefruit. Set aside 2 rosemary sprigs.
  6. 6Put two glasses in the freezer at 7:00.
  7. 7To serve: fill each frozen glass with ice. Pour the pitcher mix to three-quarters full (The 7:29 jar for the zero-proof glass).
  8. 8Top with club soda (tonic for The 7:29 — the bitterness stands in for the gin). Stir once.
  9. 9Hang a grapefruit slice on the rim and stand a rosemary sprig in the glass, leaves up.

Is it done? No experience needed

The pitcher is right when a spoonful at 6:00 tastes like something you would order — slightly sweeter than you think it should be, because ice and soda will dilute it. The glass is right when it is pale pink, cloudy, fizzing, and cold enough to fog.

The #1 way to screw it up

It tastes wrong — too sweet, too sour, or too strong — and you are finding this out at 7:32 with her in the room.

Recovery

This is why you tasted it at 6:00 and why the soda goes in last. Too strong: more soda, that is the whole fix. Too sour: a teaspoon of the leftover syrup stirred straight into the glass.
