At the stove
Method

Put ½ cup sugar, ½ cup water and 3 rosemary sprigs in a small pot over medium heat. Stir until you cannot see the sugar. Let it bubble gently for 2 minutes. Turn it off and let the rosemary sit in it for 15 minutes.

Remove the rosemary. This is rosemary syrup; it keeps in the fridge for two weeks.

In the pitcher, combine 1 cup gin, 2 cups grapefruit juice and ⅓ cup rosemary syrup. Stir and taste. Adjust with syrup or juice, 2 tablespoons at a time. Refrigerate.

In a second jar, combine 1 cup grapefruit juice and 3 tablespoons rosemary syrup. This is The 7:29. Refrigerate.

Cut four thin half-moon slices from the grapefruit. Set aside 2 rosemary sprigs.

Put two glasses in the freezer at 7:00.

To serve: fill each frozen glass with ice. Pour the pitcher mix to three-quarters full (The 7:29 jar for the zero-proof glass).

Top with club soda (tonic for The 7:29 — the bitterness stands in for the gin). Stir once.

Hang a grapefruit slice on the rim and stand a rosemary sprig in the glass, leaves up.

The check that needs no experience
The pitcher is right when a spoonful at 6:00 tastes like something you would order — slightly sweeter than you think it should be, because ice and soda will dilute it. The glass is right when it is pale pink, cloudy, fizzing, and cold enough to fog.
The #1 way to screw it up
It tastes wrong — too sweet, too sour, or too strong — and you are finding this out at 7:32 with her in the room.
Recovery
This is why you tasted it at 6:00 and why the soda goes in last. Too strong: more soda, that is the whole fix. Too sour: a teaspoon of the leftover syrup stirred straight into the glass. Hang the grapefruit half-moon on the rim so the pink flesh faces out, and stand the rosemary sprig up in the ice so it rises above the rim like a small tree. Hand it to her by the base of the glass, not the rim, and take yours from the same pitcher — it is a shared drink, not a performance.
