The Loud Oven

Baked rigatoni, a board you bought, a cookie you eat from the pan.

The one where the apartment smells like somebody's grandmother lives there. Baked rigatoni with sausage and ricotta, assembled by 6:40 and pulled out of the oven bubbling in front of her. A board of six things you bought to start, and a giant warm cookie with ice cream to finish, eaten from the pan with two spoons. It is the loudest evening in the book and the least work per decibel.

Why it works

The oven plan

The oven is off until 7:10, when it goes to 375°F. The rigatoni dish goes in uncovered at 7:25 for 35 minutes and comes out at 8:00 to rest on the stovetop. At 8:00 the oven is turned down to 350°F and left on; the cookie skillet goes in at 8:25 for 20 minutes and the oven goes off at 8:45. The board never sees heat. The only stove use is the big pot: pasta water from 6:00, sausage browned in the same pot at 6:27, cold by 6:40.

One oven, two temperatures, in a line. Nothing until 7:10, 375°F for the rigatoni from 7:25 to 8:00, then down to 350°F for the cookie at 8:25. The board covers the gap from 7:40 to 8:10 and needs no heat, the cookie was pressed into the pan at 5:40, and the stove is used once, for one big pot, and is cold by 6:40. The whole evening is one pot, one baking dish, one skillet and a cutting board, which is also the whole washing up.

The rigatoni's parmesan and the board's hard cheese are different things: the small tub of grated parmesan for the pasta, a block of sharp cheddar for the board. Fresh basil, one clamshell, for the pasta only. Grapes go on the board; the spritz uses grapefruit. Flaky salt for the cookie top, the same box as every other evening. Ice cream: one pint. The board is exactly six purchases: brie, cheddar, prosciutto or salami, grapes, water crackers, fig jam. A seventh thing breaks the budget and does not improve the board.

The reveal

The plate and the table

The board goes out at 7:40 uncovered, on the cutting board, with two small plates and napkins, and it stays on the table through dinner. At 8:10 the rigatoni dish comes to the table in oven mitts and you serve from it: a square lifted with a big spoon into a wide bowl, a spoonful of the reserved marinara over, torn basil, pepper, a thread of oil round the edge. The cookie arrives in the skillet on a folded towel between you with two scoops in the middle and two spoons, and the table has been set since 7:20: two plates, two forks, real napkins, one candle, the lamp.
