A dish coming out of the oven bubbling at the edges and browned on top, carried to the table in oven mitts, is the single most dramatic entrance in home cooking. It was assembled at 6:40, sat on the counter, and went into the oven with one push while she took her coat off.

Gear

One large pot (boil the pasta, then brown the sausage in the same pot), one 9×13 baking dish (glass or ceramic — the $8 Pyrex), a colander, a wooden spoon, foil, a phone timer.

6:00T-90Big pot, three-quarters full of water, 1 tablespoon salt. Lid on, high heat.
6:05T-85While it heats: smash and peel 3 garlic cloves. If sausage is in links, slit each casing with a knife tip and squeeze the meat out into a bowl. Throw away the casings.
6:15T-75Water boiling. Rigatoni in (12 oz). Stir once. Timer: 2 minutes less than the box says. It finishes in the oven.
6:25T-65Timer goes. Drain in the colander. Shake. Leave it there. Pot back on the stove, medium-high.
6:27T-631 tablespoon oil in the pot. Sausage in. Break it into small chunks with the wooden spoon. Stir every minute or so, 8 minutes, until brown with no pink. Garlic in for the last minute.
6:36T-54Heat off. Pour in the whole jar of marinara, keeping back ½ cup in the jar. Add the drained pasta and half the mozzarella. Stir until every tube is red.
6:40T-50Tip it into the baking dish. Spoon the ricotta over the top in 10–12 blobs — do not stir it in; the white islands are the look. Scatter the rest of the mozzarella and the parmesan over. Leave it on the counter, uncovered.

Baked Rigatoni with Sausage & Ricotta · Method

  1. 1Fill the pot three-quarters with water, add 1 tablespoon salt, lid on, high heat.
  2. 2Smash 3 garlic cloves flat with a knife and remove the skins. If the sausage is in links, cut a slit along each and squeeze out the meat.
  3. 3When the water boils hard, add 12 oz rigatoni and stir once. Cook 2 minutes less than the package says — check the box; usually 8–9 minutes total.
  4. 4Drain in the colander. Do not rinse. Leave it in the sink.
  5. 5Put the empty pot back on medium-high heat with 1 tablespoon oil.
  6. 6Add the sausage. Break it into bite-sized chunks with the spoon as it cooks. Stir occasionally for about 8 minutes until browned all over with no pink showing. Add the garlic for the last minute.
  7. 7Turn off the heat. Pour in the marinara, holding back about ½ cup in the jar for later. Add the pasta and half the bag of mozzarella. Stir until coated.
  8. 8Tip everything into the baking dish and level it with the spoon.
  9. 9Spoon the ricotta over the top in 10–12 separate mounds. Do not mix it in.
  10. 10Scatter the rest of the mozzarella and the parmesan over the top.
  11. 11Leave on the counter until 7:25 (up to 90 minutes is fine — every ingredient is already cooked).
  12. 12At 7:10, turn the oven to 375°F.
  13. 13At 7:25, put the dish in uncovered on the middle rack. Set a 35-minute timer.
  14. 14At the timer, look for bubbling at the edges and golden-brown patches on top. If not there, 8 more minutes.
  15. 15Rest 10 minutes on the stovetop. Tear basil leaves over the top. Serve from the dish.

Is it done? No experience needed

Thermometer: the sausage is fully browned before baking; after the bake, a probe in the center of the dish reads 165°F or more (you are checking the middle is hot, not safety). No thermometer: sauce bubbling around every edge of the dish, brown patches on the cheese, and a knife pushed into the center for 5 seconds comes out too hot to hold against your lip.

The #1 way to screw it up

The top is dry and the pasta is chewy, because too much sauce was held back, or the pasta was fully cooked before baking and then dried out.

Recovery

That ½ cup of marinara you kept in the jar: microwave it 60 seconds and spoon it over each serving as you plate — a fresh red layer on top hides everything. Drizzle olive oil over. If the middle is cold (dish went in straight from the fridge), cover with foil and give it 10 more minutes.

Plating

Serve from the dish at the table: cut a square with a big spoon and lift it so the layers stay stacked, then set it in the center of a wide shallow bowl. Spoon a little of the reserved warm marinara over the top so there is a fresh red gloss, then a few torn basil leaves and a grind of black pepper. Drizzle a thin thread of olive oil around the outside edge of the bowl, not on the pasta — it looks like you meant it.

Vegetarian swap

Replace the sausage with 1 lb cremini mushrooms, quartered, browned hard in the pot for 10 minutes until they shrink and darken, with the same garlic; or stir a 10-oz box of frozen spinach (thawed, squeezed dry in a towel) into the ricotta before dolloping. Same timeline. ASSUMPTION: parmesan is made with animal rennet; skip it for a strict vegetarian and use more mozzarella.

What to pour

Wine. Chianti or Montepulciano d'Abruzzo — Ruffino Chianti, about $10; or Bogle Old Vine Zinfandel, about $10, if you want something bigger.

Beer. Peroni.

No alcohol. sparkling water with a squeeze of lemon and a few basil leaves crushed in the glass.
