The one that comes to the table in the dish it cooked in. Chicken and chorizo baked into paprika rice, the foil peeled off in front of her, a lemon squeezed over. Smoked salmon toasts to start and, instead of a sweet, a board of cheese, grapes and fig jam to finish, which is how dinner ends in Spain. It is the lowest-effort main in the book and the one that looks most like you have done this before.

Why it works
The oven plan
The oven is off until 7:00, when it goes to 425°F with the rack in the middle. If there is no toaster, the rye slices go on the sheet tray on the top rack of the preheating oven at 7:05 for 6 minutes and come out before the rice goes in. The rice dish goes in under foil at 7:25 for 40 minutes, out at 8:05, oven off. The board never sees heat. The stove is used once, at 5:45, for three minutes of rosemary syrup.
One baking dish and no pots. The rice, chicken and chorizo are built cold in the dish by 6:37, hot broth goes over at 7:20, and the oven does the rest under foil from 7:25 to 8:05. The toasts are a toaster and a spreading knife, the board is six things arranged by 6:55 and uncovered at 8:40 as a cheese course instead of a sweet, and the stove is used once, for syrup, at 5:45. It is the evening with the fewest things in the sink.

One list, four cards
Two lemons: one zested and squeezed for the lemon cream and finished over the toasts at the table, one cut into wedges for the rice. Two onions, and they are different: one yellow for the rice, one small red for the toasts. Dill is for the toasts only, smoked paprika is for the rice only; buy the jar. Cured Spanish chorizo in a ring, not the raw Mexican kind; if the label does not say cured, ask. The board is exactly six purchases: brie, a sharp cheddar block, salami rather than prosciutto so it does not repeat the chorizo, grapes, water crackers, fig jam. Frozen peas, one bag, you use a cup.
The reveal
The plate and the table
Toasts out at 7:45, three on each small plate or all six on one plate in two rows, onion curls and capers and dill scattered unevenly, the lemon squeezed over at the table. At 8:10 the dish comes to the table in mitts and the foil comes off there; a tall mound into each wide bowl, a few chorizo coins and chicken chunks lifted to the top, lemon wedge on the rim, a thread of oil and a pinch of paprika on the rim of the bowl. At 8:40 the board goes between you with two small plates and the jam spoon and stays there; the table has been set since 7:20, candle lit, the lamp on, the overhead off.
