Honey-Harissa Chicken

At the stove
Method

Take the chicken out of the fridge 30 minutes before you cook it.

In a mixing bowl, stir together 3 tablespoons harissa, 2 tablespoons honey, the juice of half a lemon, 3 smashed and peeled garlic cloves, 2 tablespoons olive oil, and 1 teaspoon salt. It should look like a loose red paste.

Pat the thighs dry with paper towels. Put them in the bowl and turn them over with your hands until fully coated. Cover and refrigerate.

Drain the chickpeas and shake them as dry as you can. Peel the onion and cut it into 8 wedges.

Line the tray with foil. Spread the chickpeas and onion over it, drizzle with 1 tablespoon oil and a pinch of salt, and toss with your hands.

Zest the lemon over the yogurt using the small holes of a grater — only the yellow, stop when you hit white. Add a pinch of salt and stir. Cover and refrigerate.

Set the thighs on the chickpeas skin-side-up with space between. Scrape the rest of the marinade over them. Tuck lemon wedges around.

Cover the tray and refrigerate until 7:00.

At 7:00 turn the oven to 425°F and set the tray on the counter, uncovered.

At 7:15 put the tray on the middle rack. Set a 45-minute timer.

At the timer, probe the thickest thigh away from the bone. 165°F is done. If not, 8 more minutes.

Rest 5 minutes on the stove. Plate with a spoon of yogurt.
Is it done?
The check that needs no experience
Thermometer: 165°F in the thickest thigh, probe not touching bone. No thermometer: cut into the thickest thigh next to the bone. Clear juice, no pink, and the meat pulls from the bone easily. Skin is a deep red-brown, not orange.
The #1 way to screw it up
You bought the spicy harissa (or a tube brand that is far hotter than a jar), and the chicken is significantly spicier than either of you wanted.
Recovery
The yogurt is already on the table; that is what it is for. Put the whole tub out, not just a spoonful, and say "it's got a kick, the yogurt cools it." Squeeze the roasted lemon wedges over the chicken; acid and dairy both tame heat. Next time, mild.

The reveal
Plating
Spoon the chickpeas and onion onto the center of each plate in a rough circle, and set two thighs on top, skin-up, one leaning on the other. Drag a spoonful of the lemon yogurt in a short thick stroke on the empty side of the plate — a stroke, not a blob. Squeeze one roasted lemon wedge over the chicken at the table and leave the second one on the rim.
Vegetarian swap
One head of cauliflower cut into large florets, tossed in the same marinade, on the same chickpea bed, 35 minutes at 425°F. Same yogurt. Add a handful of torn parsley or cilantro on top to get the color contrast the chicken skin would have given you.
