Honey-Harissa Chicken

7:30

Deep red-gold chicken skin over a bed of roasted chickpeas and onion, with a cool white spoon of yogurt on the side, looks like the plate a food magazine puts on the cover in October. It is one bowl of marinade, one tray, and no flipping of anything.

Honey-Harissa Chicken · Method

  1. 1Take the chicken out of the fridge 30 minutes before you cook it.
  2. 2In a mixing bowl, stir together 3 tablespoons harissa, 2 tablespoons honey, the juice of half a lemon, 3 smashed and peeled garlic cloves, 2 tablespoons olive oil, and 1 teaspoon salt. It should look like a loose red paste.
  3. 3Pat the thighs dry with paper towels. Put them in the bowl and turn them over with your hands until fully coated. Cover and refrigerate.
  4. 4Drain the chickpeas and shake them as dry as you can. Peel the onion and cut it into 8 wedges.
  5. 5Line the tray with foil. Spread the chickpeas and onion over it, drizzle with 1 tablespoon oil and a pinch of salt, and toss with your hands.
  6. 6Zest the lemon over the yogurt using the small holes of a grater — only the yellow, stop when you hit white. Add a pinch of salt and stir. Cover and refrigerate.
  7. 7Set the thighs on the chickpeas skin-side-up with space between. Scrape the rest of the marinade over them. Tuck lemon wedges around.
  8. 8Cover the tray and refrigerate until 7:00.
  9. 9At 7:00 turn the oven to 425°F and set the tray on the counter, uncovered.
  10. 10At 7:15 put the tray on the middle rack. Set a 45-minute timer.
  11. 11At the timer, probe the thickest thigh away from the bone. 165°F is done. If not, 8 more minutes.
  12. 12Rest 5 minutes on the stove. Plate with a spoon of yogurt.

Is it done? No experience needed

Thermometer: 165°F in the thickest thigh, probe not touching bone. No thermometer: cut into the thickest thigh next to the bone. Clear juice, no pink, and the meat pulls from the bone easily. Skin is a deep red-brown, not orange.

The #1 way to screw it up

You bought the spicy harissa (or a tube brand that is far hotter than a jar), and the chicken is significantly spicier than either of you wanted.

Recovery

The yogurt is already on the table; that is what it is for. Put the whole tub out, not just a spoonful, and say "it's got a kick, the yogurt cools it." Squeeze the roasted lemon wedges over the chicken; acid and dairy both tame heat. Next time, mild.

Plating

Spoon the chickpeas and onion onto the center of each plate in a rough circle, and set two thighs on top, skin-up, one leaning on the other. Drag a spoonful of the lemon yogurt in a short thick stroke on the empty side of the plate — a stroke, not a blob. Squeeze one roasted lemon wedge over the chicken at the table and leave the second one on the rim.

Vegetarian swap

One head of cauliflower cut into large florets, tossed in the same marinade, on the same chickpea bed, 35 minutes at 425°F. Same yogurt. Add a handful of torn parsley or cilantro on top to get the color contrast the chicken skin would have given you.

What to pour

Wine. a Spanish Garnacha or a fruity Grenache blend — Campo Viejo Garnacha, about $10, or a cold dry rosé if it is warm out.

Beer. Modelo Especial with a lime.

No alcohol. mint lemonade — lemonade, torn mint, sparkling water, ice.

The practice run. Cook this once on a weeknight for yourself before the real night. Twenty dollars of groceries buys you the one thing the card can't: having done it before. 730sharp.com
