Hot espresso poured over vanilla ice cream in a glass, at the table, in front of her, is the best dessert theatre-per-second in existence. It is two ingredients. Method

Put the ice cream in the freezer as soon as you get home.

At 6:30, take it out for 5 minutes so it scoops without bending the spoon.

Put 2 scoops into each glass. Return the glasses to the freezer, uncovered, and the pint too.

Set out the espresso powder, two small cups, spoons, and a plate of biscotti.

After the main course is cleared, boil water in a kettle or a small pot.

Put 2 teaspoons espresso powder in each small cup. Pour ⅓ cup boiling water over each and stir until dissolved. It should be dark and strong — this is a shot, not a mug.

If using amaretto, add 1 tablespoon to each cup.

Take the glasses out of the freezer and carry everything to the table.

Pour the coffee over the ice cream in front of her, slowly, so it runs down the sides of the scoops.

Is it done?
The check that needs no experience
No cooking. The coffee is right when it is too strong to enjoy on its own — that is the correct strength for pouring over sugar and cream. The ice cream is right when it is hard enough that a spoon does not sink in immediately.
The #1 way to screw it up
You made the coffee weak or used too much water, and the result is a glass of lukewarm milky coffee with a sad lump in it.
Recovery
Stir in another teaspoon of espresso powder directly into the glass — it dissolves in the warm liquid — and add a third scoop of ice cream from the pint. Crumble a biscotti over the top. It now looks like a deliberate "coffee float," which is a real thing. Next time: ⅓ cup water, no more.
- Ice cream melted before the pour because the glasses sat out
- pour anyway, faster, and serve it with a straw as an "iced affogato." Genuinely fine.
- No espresso powder at the store
- the strongest brewed coffee you can make, half the usual water. Or a shot from the coffee shop on the corner at 5:30, reheated in the microwave. Nobody will detect the difference under vanilla.
The reveal
Plating
Use two clear glasses so the dark coffee running down white ice cream is visible from the side, and set each on a small plate or saucer with a biscotti leaning against the glass. Bring the coffee to the table in a separate small cup and pour it over the scoops in front of her, slowly, so it takes a full ten seconds. Do not stir it; the layers are the look, and she will stir it herself.
Vegetarian swap
Vegetarian as written. For a dairy-free guest, an oat-milk vanilla (Oatly or Häagen-Dazs non-dairy) works identically and is stocked next to the regular pints.
