Hot espresso poured over vanilla ice cream in a glass, at the table, in front of her, is the best dessert theatre-per-second in existence. It is two ingredients. If she asks how you made it, the honest answer is "I poured coffee on ice cream," and that answer will make her laugh, which is the point.

Gear
Two glasses — short tumblers, stemless wine glasses, or small mugs; clear glass is best because the pour is the show. A kettle or small pot. Two small cups or a creamer jug for the coffee. An ice cream scoop or a big spoon.
The 7:30 Timeline
| 5:30 | T-120 | Unpack. Ice cream straight into the freezer. |
| 6:30 | T-60 | Take the pint out for 5 minutes so it scoops. Put 2 scoops in each glass. Glasses back in the freezer. This is the whole trick: rock-hard scoops survive the hot pour without turning to soup. |
| 6:35 | T-55 | Hands off from here. Pint back in the freezer. Biscotti onto a small plate, covered. Espresso powder and two small cups set out next to the kettle. |
| 6:45 | T-45 | Dishes done, counters wiped. |
| 7:30 | T-0 | She arrives. She arrives. Dessert is in the freezer and needs no one. |
| 8:10 | T+40 | Main course. |
| 8:35 | T+65 | Plates cleared. Kettle on. "Give me two minutes." |
| 8:40 | T+70 | Into each small cup: 2 teaspoons espresso powder. Pour ⅓ cup boiling water over each and stir. (Amaretto: 1 tablespoon into each cup now.) |
| 8:42 | T+72 | Glasses out of the freezer. Bring the glasses, the two cups of coffee, and the biscotti to the table. |
| 8:45 | T+75 | Pour the coffee over the ice cream at the table, hers first, in one slow stream. Hand her a spoon. |
Affogato · Method
Is it done? No experience needed
No cooking. The coffee is right when it is too strong to enjoy on its own — that is the correct strength for pouring over sugar and cream. The ice cream is right when it is hard enough that a spoon does not sink in immediately.
The #1 way to screw it up
You made the coffee weak or used too much water, and the result is a glass of lukewarm milky coffee with a sad lump in it.
Recovery
Stir in another teaspoon of espresso powder directly into the glass — it dissolves in the warm liquid — and add a third scoop of ice cream from the pint. Crumble a biscotti over the top. It now looks like a deliberate "coffee float," which is a real thing. Next time: ⅓ cup water, no more.
Plating
Use two clear glasses so the dark coffee running down white ice cream is visible from the side, and set each on a small plate or saucer with a biscotti leaning against the glass. Bring the coffee to the table in a separate small cup and pour it over the scoops in front of her, slowly, so it takes a full ten seconds. Do not stir it; the layers are the look, and she will stir it herself.
Vegetarian swap
Vegetarian as written. For a dairy-free guest, an oat-milk vanilla (Oatly or Häagen-Dazs non-dairy) works identically and is stocked next to the regular pints.
What to pour
Wine. this is the after-dinner drink. If you want one: a small glass of ruby port (Sandeman Ruby, about $12) alongside.
Beer. none; a coffee stout would fight it.
No alcohol. it already is, if you skip the amaretto. Decaf espresso powder exists (Medaglia d'Oro decaf) if it is late.
