One drink, made before she arrives

The 7:30 Spritz, its zero-proof twin The 7:29, and the pitcher rule that means you pour instead of mix.

You should be able to hand her a drink within a minute of taking her coat. Not because it is smooth. Because it gives her something to hold in a new apartment, and gives you thirty seconds at the counter while you both settle in. One drink, one rule.

The pitcher rule

Make it in a pitcher, before she arrives. At the door you pour; you do not mix. A man measuring gin with a guest in the room looks like he is doing it for the first time, because he is. A man pouring from a pitcher looks like a host. Everything except the fizz is combined by T-15 and sitting in the fridge. A clean jar or an empty juice carton counts as a pitcher.

The 7:30 Spritz

Our house drink. Gin, grapefruit juice and a rosemary syrup you make in a small pot earlier in the evening, topped with soda in the glass. Pale pink, cold, a sprig of rosemary standing up in it. It looks like a bar made it. The full card is in the recipe library. Twelve minutes of real work.

  • Syrup: sugar, water and rosemary in a small pot, a few minutes on the stove, then cool.
  • Pitcher: gin, grapefruit juice, a splash of syrup. Stir, taste a spoonful, fix it with more juice or more syrup until you would order it.
  • Fridge until she arrives. Soda goes in at the glass, never in the pitcher, or it goes flat and you are serving punch.

The 7:29

The zero-proof twin. Same grapefruit, same syrup, tonic instead of soda so the bitterness stands in for the gin. Same glass, same garnish. In the hand they are identical, and that matters: if she does not drink, she does not have to announce it, explain it, or hold tap water while you hold a cocktail. Make the 7:29 jar every time. It is a cup of juice and a spoonful of syrup.

Glasses and ice

  • Two glasses in the freezer at T-30. A frosted glass is the cheapest luxury in this whole library.
  • Ice to the top of the glass. Half a glass of ice looks like you ran out.
  • Make ice the night before or buy a bag. Running out is a small thing that feels large at 7:35.
  • A grapefruit slice on the rim, a rosemary sprig standing in the ice. That is the entire garnish budget.

What to say

At the door, after the coat: can I get you a drink? I have one with gin and one without, same drink. That is all. Not drinking is now the normal option and she has nothing to justify. If she says no to both, water with the same grapefruit slice in the same frosted glass, and you have one too. The point was never the gin. The point is that she sat down with something cold in her hand and nothing to think about.
