Sausage and White Bean Bake with a Crackling Crust

It arrives at the table in the pan it cooked in, bubbling, with a golden breadcrumb lid. People think it took all afternoon. It took one pan and forty minutes in the oven.

At the stove

Method

    Rough-chop the onion, smash and peel the garlic, and chop about a tablespoon of rosemary leaves.

    Heat 1 tablespoon of olive oil in a large oven-safe pan over medium-high. Brown the whole sausages for 6 to 8 minutes, turning occasionally. Remove to a plate.

    Add the onion and a pinch of salt to the same pan. Cook 6 minutes until soft. Add the garlic and rosemary for 1 minute more.

    Add the crushed tomatoes and both cans of beans, liquid included. Season with black pepper. Stir and bring to a simmer, then take off the heat.

    Cut each sausage into three pieces and push them into the beans so the tops are showing.

    Mix 1 cup panko with a handful of parmesan and 2 tablespoons olive oil. Scatter evenly over the top.

    Bake at 400°F / 200°C for 35 minutes until the crust is deep gold and the edges bubble. Check doneness (below). Rest 10 minutes, then serve from the pan.

Is it done?

The check that needs no experience

Thermometer into the thickest sausage chunk: 160°F / 71°C. No thermometer: cut the biggest chunk in half. No pink, juices clear, firm all the way through. The beans cannot be undercooked; they came out of a can. If the sausage needs longer, give it 5 minutes at a time.

The #1 way to screw it up

The beans look dry or the crust has gone dark before the sausages are done.

Recovery

Dry: pour half a cup of water around the edge of the pan (not over the crust) and give it 5 more minutes; the beans drink it up. Dark crust: lay a sheet of foil loosely over the top and keep cooking until the sausage reads 160°F. The crust under foil stays crisp enough. A dark crust is rustic. A black one gets scraped off and replaced with more parmesan.

The reveal

Plating

Bring the pan to the table on a board so the crust arrives intact and the bubbling edge is visible. Serve into wide shallow bowls with the big spoon, breaking through the crust in front of her rather than in the kitchen. A few rosemary leaves and a drizzle of olive oil on each bowl, and the bread propped against the pan.

Vegetarian swap

Use four plant-based sausages (brown them the same way, they need less time) or skip the sausage and add 250 g of whole mushrooms, browned hard in the oil before the onion goes in. Everything else is identical.
