There is a tub of yogurt, a hot oven, and a lemon you cut in half and forgot about, on purpose. Yogurt-Marinated Chicken with Charred Lemon · Method
Is it done? No experience needed
Thermometer: 165°F in the thickest thigh. No thermometer: cut the biggest piece in half. No pink anywhere, juices run clear, and the meat pulls apart in strands rather than looking wet and smooth. The surface has dark brown or black spots where the yogurt was thickest.
The #1 way to screw it up
The chicken is cooked through but pale orange with no dark spots, because the tray sat on the middle rack or the oven had not fully reached 450°F when it went in.
Recovery
Move the rack to the top slot, switch the oven to broil on high, and give the tray 3 minutes with the door cracked open and you standing there watching it. Dark spots appear fast and then burn faster; pull it the moment it looks like a grill did it. If you would rather not leave the room, plate it pale, dust it with paprika, and squeeze the charred lemon over — the lemon supplies the char, and the yogurt sauce is the point of the plate anyway.
Plating
Spoon the rice salad in a loose mound on one side of a wide plate, not the center. Lean three thighs against the rice, charred side up, each overlapping the last, and set a black-faced lemon half on the rim so the cut side shows. Drag a spoonful of the lemon yogurt in a short stroke on the empty side of the plate, dust it with a pinch of paprika, and serve.
Vegetarian swap
One 14-oz block of paneer (dairy case, next to the fresh mozzarella) cut into 8 thick slabs, or a block of extra-firm tofu pressed dry between paper towels and cut the same way. Same marinade, same tray, same 450°F, timer 20 minutes instead of 24. Paneer chars in yogurt better than chicken does. Same rice, same sauce, same lemon halves.
What to pour
Wine. a crisp Sauvignon Blanc with cold lemon-and-cucumber energy — Oyster Bay Sauvignon Blanc, about $12; Kim Crawford, about $14, if you want to spend the extra two.
