Whole Roasted Cauliflower with Tahini & Pomegranate

A bronzed whole head carried to the table on a board and cut into wedges in front of her, with white sauce running down it and red jewels scattered over, reads like a roast. It is one vegetable rubbed with oil and paprika and left in the oven for an hour and twenty minutes, and a sauce stirred in a bowl with a fork.

6:00T-90Cauliflower: pull off the green leaves. Cut the stem flat so the head stands on its own. Rinse, shake dry, pat with a towel.
6:05T-85Rub: 3 tablespoons oil, 1 teaspoon salt, 2 teaspoons smoked paprika, mixed in the bowl. Rub over the whole head with your hands, into the gaps, like sunscreen.
6:10T-80Head onto the foil-lined tray, stem down. Tear a second sheet of foil and lay it loosely over the top like a hat. Counter.
6:15T-75Tahini sauce: ⅓ cup tahini, juice of the lemon, 1 garlic clove smashed and chopped small, ½ teaspoon salt. Stir with a fork. It will seize into a stiff paste. This is normal.
6:18T-72Add cold water 1 tablespoon at a time, stirring after each, until it pours like pancake batter — usually 4 to 6 tablespoons. Cover, counter.

Whole Roasted Cauliflower with Tahini & Pomegranate · Method

  1. 1Line the sheet tray with foil. Tear a second sheet about the same size and set it aside.
  2. 2Pull the green leaves off the cauliflower and throw them away. Turn the head upside down and cut the stem flat with the bottom of the florets so the head stands up on its own without wobbling. Do not cut into the florets; the head must stay whole.
  3. 3Rinse the head under the tap, shake it hard over the sink, and pat the outside dry with a towel.
  4. 4In the mixing bowl, stir 3 tablespoons olive oil, 1 teaspoon salt, and 2 teaspoons smoked paprika into a red slurry.
  5. 5Set the head on the foil-lined tray, stem down. Pour the slurry over the top and rub it over the whole surface with your hands, pushing it down into the gaps between the florets. Rub some on the underside too. Wash your hands.
  6. 6Lay the second sheet of foil loosely over the head like a hat, not sealed — you want it to trap steam for the first 25 minutes so the middle cooks, then come off so the outside browns.
  7. 7Wash the bowl. Put ⅓ cup tahini in it — stir the jar first if there is oil on top. Squeeze in the juice of the lemon.
  8. 8Smash 1 garlic clove flat with the side of a knife, pull off the skin, chop it as small as you can, and add it with ½ teaspoon salt.
  9. 9Stir with a fork. The sauce will go thick and stiff and look ruined. It is not ruined; this always happens.
  10. 10Add cold water 1 tablespoon at a time, stirring hard after each. Around the fourth or fifth tablespoon it loosens into a smooth, pale sauce that pours slowly, like pancake batter. Stop there. Cover it and leave it on the counter.
  11. 11Pull the parsley leaves off the stems and chop them roughly. Drain the pomegranate cup. Both onto a saucer, covered, in the fridge.
  12. 12At 6:30, turn the oven to 425°F with the rack in the middle.
  13. 13At 6:45, slide the tray in with the foil hat on. Set a 25-minute timer.
  14. 14At the timer, open the oven, lift the foil hat off with tongs, and close the door. Set a 55-minute timer.
  15. 15At 7:55, stack the pitas, wrap them in foil, and slide the packet onto the lower rack.
  16. 16At the timer, do the knife test (below). Pull the tray when it passes. Turn the oven off and leave the pita packet in it.
  17. 17Slide the head onto the cutting board with a spatula. Let it rest 3 minutes.
  18. 18Pour the tahini sauce over the top so it runs down the sides. Scatter the pomegranate and parsley over the sauce.
  19. 19Carry the board, the knife, and the pita to the table. Cut the head down the middle, then each half into three wedges, in front of her.

Is it done? No experience needed

No thermometer. Push a table knife straight down into the center of the head from the top. It should slide in the way a knife goes into soft butter, with no push. If it stops or you have to lean on it, it is not done; foil hat on, 12 more minutes. The outside should be deep bronze all over with a few dark tips on the florets. Nothing here can be unsafe when under-cooked, only crunchy.

The #1 way to screw it up

The outside is bronze and beautiful at 8:05 and the knife stops dead an inch into the center. The head was too big, or the foil hat came off too early.

Recovery

Foil hat back on, tray back in, 12 minutes, test again. Serve at 8:20; the starter and the drink absorb fifteen minutes without anyone noticing. If at 8:20 the middle is still firm, cut the head into 6 wedges on the tray, lay them cut-side down, and give them 10 more minutes at 450°F uncovered — wedges cook through fast. Plate the wedges fanned on a platter with the sauce over them; the carve-at-the-table moment is gone but the dinner is not, and the wedges look deliberate.

Plating

Set the whole head on a wooden board or a large flat plate and pour the tahini sauce over the very top so it runs down the sides in streaks rather than covering it. Scatter the pomegranate and parsley across the top and let some fall onto the board. Cut it at the table into six wedges, put three on each plate with any sauce and seeds that fell, and tuck two warm pitas alongside.

Vegetarian swap

Vegetarian and vegan as written; the sauce is sesame, lemon, and water. To add meat: four Italian sausages on the same tray for the last 25 minutes (slide them on at 7:40 when you check the oven; 160°F internal), or serve the wedges beside the thighs from chicken-dates-olives-lemon on a shared platter.

What to pour

Wine. a Sauvignon Blanc with some bite — Oyster Bay, about $12, in every Safeway. Cold.

Beer. a pale ale — Sierra Nevada Pale Ale.

No alcohol. pomegranate juice (POM) topped with sparkling water and a squeeze of lemon, over ice.
