Whipped Feta with Honey & Pistachios

A pale, swooped mound of something creamy with a pool of gold honey and a scatter of green nuts is the signature starter at every Mediterranean restaurant with a waiting list. It is a block of feta mashed with yogurt and a fork. You will be embarrassed by how little this took.

One medium bowl, a fork (or a blender/food processor if you own one), a zip-top bag and a heavy pot (to crush the pistachios), a shallow plate or wide bowl for serving, a sheet tray for the pita.

6:00T-90Drain the feta and crumble it into the bowl with your hands. Add the yogurt, 2 tablespoons olive oil, and the zest of the lemon (rub the lemon on the small holes of a grater, yellow only).
6:03T-87Mash with the fork, pressing against the side of the bowl, for 3 full minutes. It goes from crumbly to thick and spreadable, like frosting. (Blender: 30 seconds, done.) Squeeze in the juice of half the lemon. Taste; it should be salty and bright. Cover, fridge.

Whipped Feta with Honey & Pistachios · Method

  1. 1Open the feta and pour off the brine. Crumble the block into the bowl with your fingers.
  2. 2Add the whole tub of yogurt, 2 tablespoons olive oil, and the grated zest of one lemon.
  3. 3Mash with a fork, pressing the feta against the side of the bowl, for about 3 minutes, until there are no big lumps and it holds a swoop when you drag the fork through it. If you have a blender or food processor, use it for 30 seconds instead.
  4. 4Squeeze in the juice of half the lemon and stir. Taste. If it is flat, add a pinch of salt; if it is too sharp, a teaspoon of honey.
  5. 5Cover and refrigerate. Take it out 30 minutes before serving.
  6. 6Put a handful of pistachios in a zip-top bag and crush them with the bottom of a pot into coarse pieces.
  7. 7Cut each pita into 6 triangles. Spread on a tray, drizzle with oil, sprinkle with salt.
  8. 8Warm the pita at 400°F for 6 minutes, or 2 minutes a side in a dry skillet over medium heat.
  9. 9To plate: spoon the dip onto the plate, then drag the back of the spoon through it in a circle to make a swoop with a shallow well in the middle.
  10. 10Pour honey into the well, scatter the pistachios over, tear a few mint leaves on top, drizzle with olive oil, and grind black pepper over.

Is it done? No experience needed

No cooking. The dip is ready when a fork dragged through it leaves a groove that stays. Pita is ready when it is warm and a little puffed; brown spots are fine, black is past.

The #1 way to screw it up

The dip is stiff, grainy, and too salty, because you bought pre-crumbled dry feta or a very salty brand.

Recovery

Add more yogurt — a spoonful at a time — and another tablespoon of oil and keep mashing; yogurt fixes both the texture and the salt. Then be more generous with the honey on top. A grainy version with a lot of honey and pistachio on it still gets the reaction; it just isn't the smooth swoop.

Plating

Use a shallow, wide plate rather than a bowl so the swoop is visible from above, and spread the dip in a rough circle about an inch thick. Make one confident circular drag with the back of a spoon to create a well, then pour a tablespoon of honey into the well and let it run into the groove on its own. Finish with the crushed pistachios scattered over the top only, three or four torn mint leaves, a thin drizzle of olive oil, and the warm pita fanned around one side of the plate, not all the way round.

Vegetarian swap

Vegetarian as written. ASSUMPTION: most supermarket feta uses microbial rennet; check the label if it matters. For a vegan guest: swap to store-bought hummus swooped the same way with the same honey (or maple), pistachios, mint, oil — it looks nearly identical.

What to pour

Wine. a crisp Sauvignon Blanc or a dry rosé — Chateau Ste. Michelle Sauvignon Blanc, about $9.

Beer. a pilsner or a Greek lager if the store has one (Mythos); Stella otherwise.

No alcohol. sparkling water with cucumber slices and a mint sprig, over ice.
