Sheet-Pan Halloumi & Vegetables with Hot Honey

Slabs of golden, blistered cheese over peppers and onions gone soft and black at the edges, with a chili-honey drizzle catching the light, is the plate every wine bar charges $19 for. It is one tray, one oven, and a cheese that cannot melt no matter what you do to it. That last part is the secret: halloumi is the only cheese that forgives you.

One sheet tray, foil, a phone timer. The pita warms in a foil packet beside the tray. No thermometer needed; nothing here has a safe temperature to hit.

6:15T-75Oven to 425°F, rack in the top third. Line the tray with foil.
6:18T-72Peppers: cut in half, pull out the stem and seeds, cut into strips about an inch wide.

Sheet-Pan Halloumi & Vegetables with Hot Honey · Method

  1. 1Turn the oven to 425°F with a rack in the top third. Line the sheet tray with foil.
  2. 2Cut each pepper in half from top to bottom. Pull out the stem, the seeds, and the white ribs with your fingers. Cut the halves into strips about 1 inch wide.
  3. 3Cut the zucchini into coins about as thick as your thumb.
  4. 4Peel the onion, cut it in half through the root, and cut each half into 4 wedges.
  5. 5Put the peppers, zucchini, onion, and whole cherry tomatoes on the tray. Add 3 tablespoons olive oil and 1 teaspoon salt. Toss with your hands and spread everything into one layer.
  6. 6Slide the tray onto the top-third rack. Set a 25-minute timer.
  7. 7Take the halloumi out of its packet and pat it dry with paper towels, pressing firmly; wet cheese steams instead of browning. Cut it into 8 slabs about ½ inch thick.
  8. 8Wrap 4 pitas flat in a sheet of foil. Cut the lemon into 4 wedges.
  9. 9At the timer, pull the tray and turn the oven off. The peppers should be limp with dark brown or black edges and the tomatoes wrinkled. Leave the tray on the stovetop, uncovered.
  10. 10At 7:10, lay the halloumi slabs on top of the vegetables with space between them. Drizzle a teaspoon of oil over the slabs.
  11. 11At 7:25, turn the oven back on to 425°F.
  12. 12At 7:55, slide the tray back onto the top-third rack and set the pita packet on the rack beside it. Set a 14-minute timer.
  13. 13At the timer, pull both. The tops of the halloumi slabs should have golden-brown patches. If they are still white, 4 more minutes.
  14. 14Plate at once: vegetables first, cheese on top, hot honey over, lemon squeezed over.

Is it done? No experience needed

Thermometer: not needed. Nothing here is meat. No thermometer: the halloumi has golden-brown patches on top and gives under a fingertip. Pepper strips are floppy with blackened edges. A zucchini coin cuts with a fork with no push.

The #1 way to screw it up

The halloumi comes out white and rubbery with no golden patches, because the slabs were wet when they went on, or the tray was on the middle rack instead of the top third.

Recovery

Move the rack to the top slot, switch to broil on high, and give it 2–3 minutes with you watching through the door; halloumi colors quickly under direct heat. If you would rather stay in the room, plate it pale and lean on the drizzle: hot honey over the cheese, a hard squeeze of lemon, black pepper. Nobody at a wine bar has ever sent halloumi back for being pale.

Plating

Pile the vegetables in a wide band across the middle of a large plate, leaving the rim clean. Shingle four halloumi slabs over the top, browned side up, each overlapping the next, and zigzag hot honey across the cheese so it drips down onto the peppers. Squeeze a lemon wedge over everything, grind black pepper across the top, and tuck two warm pita halves upright at the edge.

Vegetarian swap

This one already is (check the halloumi label: most brands are vegetarian rennet, some are not; feta from cow or sheep milk usually is). For a vegan guest: a block of extra-firm tofu pressed dry between paper towels for 10 minutes, cut into the same 8 slabs, oiled and salted, laid on the vegetables at 7:10 and baked the same 14 minutes; use plain honey with a pinch of chili if honey is a problem, or agave. Same tray, same timeline.

What to pour

Wine. a dry rosé, cold — Josh Cellars Rosé, about $13, or Kim Crawford Rosé, about $15. Salt, chili, and honey want pink wine.

Beer. Blue Moon with the orange slice; the wheat-beer softness suits the chili.

No alcohol. grapefruit soda (Squirt or a San Pellegrino Pompelmo) with a squeeze of lemon over ice.
